Heartshape Beetroot : the magical taste of Bortsch.

As explain in a previous post, I have enrolled to a new food box called Cookin’theworld. Most recipes were nice, but the Bortsch was a revelation. It tasted deliciously!

As a reminder, the Cookin’theworld concept is a box delivered to your doorstep, full of fresh ingredients to create 4 meals for 2 or 4, vegetarian, or not.

This is perfect for busy or lazy moms like me who can’t be bothered to think of new recipes or even go to places where I could find some fresh quality ingredients.

And so this is how I ended-up doing a Ukrainian Bortsch. It sounds like the onomatopoeia for puking, but it is actually quite nice!

Ingredients :

  • 300 g of potato
  • 1/2 red onion
  • A raw beetroot
  • A parsnip
  • A carrot
  • 100g of Crème Fraîche
  • 2 table-spoon of Dill
  • 1/2 garlic clove

Ingredients

  1. Cut the onion, the carrot, the potato, the parsnip and the beetroot. Cut cut cut!Cut

2. In a hot Pan, put a dash of olive oil and a knob of butter cook the onions for 3 minutes before adding the garlic then all the vegetables. Pour water so it will cover the vegetables. Make it boil before covering the pan and leave it to cook for 25 minutes over medium heat, till the vegetables are tender.

3. This was not in the recipe, but I preferred it like that so follow it or not : Blend it!

Add the Crème Fraîche once it’s almost completely smooth, and then finish blending.

4. Serve it warm! I have added few Pumkin Seeds for decoration purposes.
