My mother has always done the best cucumbers on the planet.
You can’t deny it, you never tried them!
So, she gave me her little recipe that I am sharing with you here.
Nothing amazing, nothing fancy, just simple good healthy food.
You will need :
- a cucumber,
- half lime or half a lemon,
- herbs (Mint, Basil, Thyme, Rosemary)
- coarse salt
- some time
- optional fresh cream
Start by peeling the cucumber
Then cut it into thin slices
Add the coarse salt and don’t hesitate to put a lot, you will rinse it afterwards.
Leave it to disgorge in the fridge for a few hours.
I have used the Mint and Thyme from my balcony, and the last miserable stem left on my Basil (as someone forgot to water it whilst I was in Corsica)
After few hours, rinse your Cucumber 2 or 3 times.
Add the herbs, the lemon and the optional fresh cream.
You get your tasty little cucumbers :)
